Sweet Potato Casserole

Orange juice and zest take this holiday classic over the top!!


6 cups, baked and peeled sweet potatoes (about 6-7 large sweet potatoes)
1/2 c. salted butter, melted
3/4 c. brown sugar
3/4 c. granulated sugar
2 eggs
1/2 c. milk (2 % or whole)
1/2 c. orange juice
Zest of 1 orange
6 T. all-purpose flour
3 t. cinnamon
2 t. vanilla
1 10 oz. bag mini marshmallows
Non-stick cooking spray


Spray potatoes with non stick spray so that peeling can removed easily once baked. Bake sweet potatoes at 400 degrees for 1 hour and 20 minutes. Remove peel and place in mixing bowl and add melted butter. Mix until potatoes are smooth. Add the rest of ingredients one at a time in order listed, except marshmallows, mixing in between each addition.

Place in 9×13 casserole dish and bake for 30 minutes at 350 degrees. Remove sweet potatoes from oven, add marshmallows on top of casserole and broil until marshmallows are lightly browned. Enjoy!

**You can make the sweet potato mixture up to two days prior to serving and refrigerate until you are ready to bake.
