Roasted Brussels with Bacon and Apple
Ingredients and Recipe:
2 lbs. Brussels sprouts (rinsed and halved)
6 slices uncured, thick cut bacon, sliced into 1 inch pieces
1 Granny Smith apple, chopped
1/8 cup white balsamic vinegar
1/8 cup sugar
Salt and pepper to taste
Olive oil
Preheat oven to 425. Rinse Brussels and chop off nubby stems, remove loose leaves, and half brussels long ways. Toss them in a couple of tablespoons of olive oil. Spread out across two baking sheets so that they are not touching and have plenty of room to roast. Sprinkle with desired amount of salt and pepper. Divide bacon evenly between sprouts on the baking sheets. Roast for about 20-25 minutes, until sprouts are browned but not burned!
While sprouts are cooking, combine vinegar and sugar on the stove over medium heat until sugar is dissolved. Remove from heat and set aside. Slice Granny Smith apple into bite-sized pieces and place in serving bowl.
Once sprouts are roasted, remove from oven to serving bowl and toss with apple and vinegar mixture. For a bit of added heat, you can sprinkle on a few red pepper flakes as well. Serve immediately!! Enjoy!
