Pumpkin Bread

Mimi’s Pumpkin Quick Bread
3 1/2 cups flour
3 cups sugar
4 eggs
1 cup vegetable oil
1/2 cup water
4 t. cinnamon
2 t. nutmeg
1 t. cloves
1 t. pumpkin pie spice
2 t. soda
1 t. salt
2 1/2 cups canned pumpkin
1 cup chopped nuts (optional)

Cream sugar and eggs. Add oil, water, pumpkin, spices, soda, salt, and flour. Fold in nuts, if using.

Spray pans with baking spray and bake at 325 for one hour. This recipe makes 2 large loaves (9×5) and one small loaf (5 1/2×3) or 4- 1lb. coffee cans. 🎃

Let pumpkin bread cool and then spoon on glaze.
Glaze:
3 cups powdered sugar
1/3 c.half and half
1/2 t. vanilla
1 t. Pumpkin pie spice
Mix all ingredients together and drizzle in loaves.
